I’m back! After a long, crazy semester, I finally can breathe + bake again. One of my favorite parts of the summer is having more time to relax, shop, and bake!
For my first free Saturday night, I made these beautiful, delicious Very Berry Muffins. Here’s the recipe!
Very Berry Muffins (via Sally’s Baking Addiction)
Ingredients
- 3 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 cup milk, at room temperature
- ½ cup canola oil
- 1 teaspoon vanilla extract
- 2 cups mixed berries, fresh or frozen (not thawed)
Directions
- Preheat oven to 475 F.
- Mix flour, baking powder, salt, ground cinnamon. Set aside.
- Mix eggs, sugar, brown sugar. Then mix in milk, oil, and vanilla.
- Fold in wet ingredients to the wet ingredients. Mix in the berries!
- Bake at 425F degrees for 5 minutes. Keeping the muffins in the oven, reduce oven temperature to 375F and continue to bake for 25-26 minutes until tops are lightly golden.
