I’m back! After a long, crazy semester, I finally can breathe + bake again. One of my favorite parts of the summer is having more time to relax, shop, and bake! 

For my first free Saturday night, I made these beautiful, delicious Very Berry Muffins. Here’s the recipe!

Very Berry Muffins (via Sally’s Baking Addiction)

Ingredients

  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 cup milk, at room temperature
  • ½ cup canola oil
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries, fresh or frozen (not thawed)

Directions

  1. Preheat oven to 475 F.
  2. Mix flour, baking powder, salt, ground cinnamon. Set aside.
  3. Mix eggs, sugar, brown sugar. Then mix in milk, oil, and vanilla.
  4. Fold in wet ingredients to the wet ingredients. Mix in the berries!
  5. Bake at 425F degrees for 5 minutes. Keeping the muffins in the oven, reduce oven temperature to 375F and continue to bake for 25-26 minutes until tops are lightly golden.
  6. Enjoy!
